INGREDIENTS
Maddock Ranch Country Sausage, sliced
1 medium onion diced up
1 red, yellow, or orange bell pepper (optional)
1 tbsp minced garlic
2 cups chicken broth
1 10oz can of diced tomatoes (with our without chiles)- We like it with a little kick so we use Rotel
1/2 c milk or heavy cream
8oz penne pasta
Salt and pepper
1/3 block of cream cheese
1 cup or as much as your heart desires of shredded Cheddar Jack cheese
DIRECTIONS
- Melt butter in pan, add onions, peppers and sausage, cook until sausage is slightly browned
- Add chicken broth, tomatoes- don't drain, milk/cream, cream cheese, pasta, and seasoning.
- Bring to boil and simmer until pasta is tender and liquid is mostly absorbed
- Turn off heat and stir in 1/2 of cheese then let rest of cheese melt on top!
