Sausage and Potato Hash

Ingredients (serves 4):

4 medium potatoes, diced

1 lb MR Smoked Pork Country Sausage sliced into bite-sized pieces

1 onion, diced

2 bell peppers, diced

2 tbsp olive oil

1–2 tsp Real Salt Organic Garlic Salt (to taste)

Black pepper, to taste

Optional: 4 eggs (for frying on top)

Instructions:

  1. Prep the foil packs: Tear 4 large sheets of heavy-duty aluminum foil. Lightly oil or spray the center of each to prevent sticking.

  2. Combine ingredients: In a large bowl, toss the potatoes, sausage, onion, and bell peppers with olive oil, garlic salt, and pepper.

  3. Assemble: Divide the mixture evenly between foil sheets. Fold up the sides and seal tightly to make a packet.

  4. Cook over the fire (or stove): Place the packets on your heat source and cook for 20–25 minutes, flipping occasionally, until the potatoes are golden brown and the sausage is fully heated through.

  5. Top it off: Carefully open packets (watch the steam!) and, if desired, top each serving with a fried egg for extra richness.

Tip: Add a sprinkle of fresh herbs like parsley or chives before serving for a fresh touch.
