Ingredients (serves 4):
4 medium potatoes, diced
1 lb MR Smoked Pork Country Sausage sliced into bite-sized pieces
1 onion, diced
2 bell peppers, diced
2 tbsp olive oil
1–2 tsp Real Salt Organic Garlic Salt (to taste)
Black pepper, to taste
Optional: 4 eggs (for frying on top)

Prep the foil packs: Tear 4 large sheets of heavy-duty aluminum foil. Lightly oil or spray the center of each to prevent sticking.

Combine ingredients: In a large bowl, toss the potatoes, sausage, onion, and bell peppers with olive oil, garlic salt, and pepper.

Assemble: Divide the mixture evenly between foil sheets. Fold up the sides and seal tightly to make a packet.

Cook over the fire (or stove): Place the packets on your heat source and cook for 20–25 minutes, flipping occasionally, until the potatoes are golden brown and the sausage is fully heated through.
- Top it off: Carefully open packets (watch the steam!) and, if desired, top each serving with a fried egg for extra richness.
Tip: Add a sprinkle of fresh herbs like parsley or chives before serving for a fresh touch.
