2-3 pound tri-tip roast
DIRECTIONS
- Coat the roast in Maddock Ranch Meats Carnivore Seasoning

Grilling
Preheat grill until hot.
Sear roast until caramelized on all sides.
Turn grill down to low or move off of coals to indirect heat and roast until internal temperature reaches 128.
Let rest for 15 minutes and slice and serve.

Set smoker at 275 and smoke with beef friends wood (oak, hickory, mesquite) until internal temperature reaches 128.
Let rest for 15 minutes and slice and serve.

Oven
Preheat oven to 375.
Heat an oven-safe pan until hot.
Coat pan with tallow or oil and sear roast until caramelized on all sides.
Put in oven until internal temperature reaches 128.
Let rest for 15 minutes and slice and serve.Slicing Tip: When slicing a tri-tip roast, the key is to always cut against the grain to achieve the most tender result; this means identifying the direction of the muscle fibers and slicing perpendicular to them, as the grain can change direction throughout the cut, so be sure to adjust your knife angle accordingly.
